This lychee butterfly pea drink is sweet, floral, citrusy, and wonderfully dramatic in the glass. Butterfly pea tea starts blue, then turns purple when it meets lemon or lime juice—perfect for a simple summer mocktail that feels special.
Ingredients
- 2 butterfly pea tea bags
- ¾ cup hot water
- ½ cup canned lychees, plus 2 tablespoons lychee syrup
- 1 tablespoon fresh lime juice
- 1 teaspoon honey, optional
- ½ cup sparkling water
- Ice and mint to serve
How to make it
- Steep the tea bags in hot water for 5 minutes. Remove them and cool completely.
- Add lychees and their syrup to a glass. Lightly crush two or three lychees.
- Fill the glass with ice and pour in the cooled blue tea.
- Mix lime juice with honey; pour it in slowly to create the purple color change.
- Top with sparkling water, stir gently, and garnish with mint.
Easy variations
Use lemon instead of lime for a brighter flavor. Add blueberries for extra color, or replace sparkling water with lemon soda for a sweeter party version.
